There are myriads of Microsoft products and they generally have a Microsoft-wide and product-specific legal documents.
You can delete your account and it'd generally apply across the board. There are product-specific accounts you have to keep in mind of, for example, if you have an account with Skype before they were bought by Microsoft.
They do retain PII for legal and tax purposes.
